
If you’re interested in trying something new, a sampler or a flight is a great way to do so. I have no real knowledge of sake other than knowing it’s made of rice. I’ve tried it a couple times but just buying a small bottle or two can get expensive fast. Since I don’t know enough about it to know what I might like or not, I decided to try a sake flight at Yayoi when I was there.
I took photos of the flavor descriptions, added them to a not in my phone, and wrote down what I was tasting as I drank it. This was an idea I picked up last semester when writing a story on a coffee festival. We only really develop our palates when we contemplate what were tasting and comparing it to the palate of someone who is more advanced.
It’s also a great way to figure out what you do and don’t like about something that’s new to you. If you keep the notes long enough, you can even use it to document your journey. I’ve started doing this for the wines that I taste, so I not only know what I liked,, but what I didn’t and why.

Has a childhood nostalgia flavor to it. I know that I know, but I can’t remember what exactly the flavor reminds me of.

Do not like. Tastes like licorice.

Very fragrant, fruity-floral. I’ve never had jackfruit, so I’m not sure if that is what I’m smelling.
